The perfect stay
A village within a village, Thyme is set across Southrop Manor’s 150-acre estate, surrounded by fields, farmlands and vast water meadows. The site comprises 31 bedrooms dispersed between a halcyon assortment of restored buildings and 17th-century cottages, with winding paths leading you to the Meadow Spa, the Swan pub and a host of characterful dwellings. Luckily, Thyme provides a detailed map of the grounds, so you won’t lose your bearings during your stay.
Seamlessly blending tranquillity with refined appeal, the outdoor pool and Orchard House promise the epitome of relaxation, whether you choose to take a refreshing plunge or unwind poolside. A short stroll away, the Cookery School delivers artisanal masterclasses, inviting guests to delve into the art of foraging, charcuterie and bread making. Special touches include the boutique shops, the Baa Bar and the fruitful gardens cultivated by six-times Chelsea Flower Show gold medallist Bunny Guinness.
Each bedroom, found in the Farmhouse, Lodge, Old Walls and Gardener’s Cottage, is individually decorated and offers everything from cosy hideaways to spacious suites and split-level rooms. Throughout, you’ll find sumptuous velvet curtains and whimsical floral wallpaper, accompanied by minibars stocked with Cotswold Gin, antique furniture and higgledy-piggledy floors that echo Thyme’s historical tapestry.
A favourite amongst guests is the Nepeta room, located in the 8-bedroom Farmhouse. Tucked beneath exposed wooden beams, it’s decorated with subdued hues, vintage furnishings and windows bathed in natural sunlight. Design
Starting from scratch
With roots tracing back to the Roman era, Thyme has stood for centuries, transforming from an ancient monastery to a private estate in the 17th century. Its enduring legacy is one of the many qualities that owners Caryn and Jerry Hibbert wanted to interweave into the design when they acquired the Southrop Manor in 2002. The approach was clear: create an inviting space that transcends the typical hotel experience, all while capturing the essence of beauty, nature and conservation. The result? A peaceful hideaway that embraces both the old and new.
Thyme’s restoration journey began with Caryn and her father, Michael Bertioli, a physicist and engineer. When it came to the exterior, Caryn’s ambition was to bring purpose back to the agricultural buildings by preserving the space and reconnecting the farm with the land. Meanwhile, Michael set his sights on the technology, striving to make Thyme as energy-efficient as possible with modern heat pumps and wood-chip boilers.
Inside, film and theatre designer Roger Hall drew heavily on Thyme’s rich heritage, upholding the grand chevron arches crafted by English architect Norman Jewson. Each room has been meticulously created with clean lines running from floor to ceiling, complemented by polished marble accents and period aesthetics that nod to its countryside setting.

With a curated calendar of events that draws inspiration from the seasons, there’s always something to do or see at Thyme. From wellness workshops and healing meditation practices to mastering the craft of pickling and preserving, each session promises to delight both the senses and the soul.
A popular choice amongst patrons is floristry. Here, guests are encouraged to embrace the beauty of nature alongside Head Florist Sophie Witham, creating elegant arrangements that breathe life into every room. For those looking to pursue novel pastimes, book an expert-guided painting class or wander through the ever-changing art exhibitions at the Tithe Barn.
Meet the host
Caryn Hibbert
Before becoming the owner, Creative Director and heart of Thyme, Caryn Hibbert pursued a career as a doctor, specialising in women’s medicine. After meeting Jerry, a Soho-loving animator and film director, Caryn became a homemaker and mother to Charlie, who later became the Head Chef at the Ox Barn, and Camilla, Thyme’s General Manager.
Caryn’s unwavering passion for food, farming and wildlife served as the driving force behind the hotel’s creation, which she describes as “an extension of me, our family and our home”. It’s her steadfast devotion and dedication that’s shaped it into the serene sanctum we see today.

The abundance of freshly made food and traditional country cuisine is Thyme’s crowning glory — most notably, the Ox Barn. Paying homage to its agricultural origins, this epicurean escape delivers picked-that-day produce and thoughtful ingredients under the direction of the esteemed Head Chef. You can expect an ever-evolving menu — like seasonal salads, braised beef with salsa verde and refreshing lemon posset.
Breakfasts, lunches and dinners are all served in the converted 19th-century barn, adorned with a rubble facade and white-washed walls that exude calmness. Scandi-inspired furniture, sleek glassware and pendant lights suspended from the wooden framework set the scene for an elevated experience, while the full-bodied wine selection lends the perfect finishing touch.
